How to Make Masala Scrambled Eggs

This is a quick concoction that you can eat for breakfast. This simple dish has the Indian twist to a normal scrambled egg. There are no spices in this dish- just good flavors and a little sliced chilli for punch. Once you start eating eggs cooked in this way its difficult to enjoy them plain.

Ingredients

Serves 1

• 1 tsp vegetable oil
• A bit of butter
  
• 1/4 small onion peeled and finely chopped
  
• 2 eggs
  
• 1/2 small tomato, finely chopped
  
• 1/2 green chilli, finely sliced
  
• 1 heaped tbsp chopped fresh coriander
  
• salt

   Heat the oil and butter in a non stick frying pan.

   Add the onion and cook for 2 minutes.

   Meanwhile, whisk the eggs with tomato, chilli, fresh coriander and salt.

   Add the eggs to the pan and scramble as you would normally, leaving them a little longer than usual.
